Today, I am making Summer Salsa. This is my go-to recipe when I need a quick appetizer. It is easy and tasty. Don’t worry, you won’t have to scroll through pages of advertising to get to the recipe. Spoiler alert-the salsa has lentils. You heard that right, lentils. I take lousy pictures so sorry for the picture above. I promise you that you will get compliments on this one.
SUMMER SALSA
1 can black beans
1 can lentils (or about 1 cup of cooked lentils)
2 cans corn
Red or orange pepper ( I usually use one)
Red onion to taste (I usually use 1/4 of onion)
Cilantro (I love cilantro so I use about 1/4 cup)
Catalina dressing (add enough to mix all the ingredients together)
Mix everything together and serve with chips-easy, right?! If you add more Catalina dressing, you get a saucy salsa. If you don’t add a lot, you get a chunky salsa. Experiment with the ingredients. You can also add veggies from your garden. I usually buy my lentils and Catalina dressing from Amazon-see link below.
